Well, it's raining today. I really Love the rain, everything seems so clean and refreshed.

It's not always fun when you have to get out and about or have to drive in it but still,

it can be a refreshing thing. My kids love playing in the rain

and you know what "so do I" smiley

 

I had a thought when preparing my blog today. Have you ever wondered about Risotto? What it really is? How to cook and serve it? Well lets see if we can make this fun.

Risotto, is a northern Italian, rich dish, cooked in a broth, to a creamy consistency. The broth can be from meat, fish or vegetables. Many types of risotto contain butter, wine and onion.

Here is a quick easy Risotto dish you can make at home. 

Ingredients:

     1 pound of risotto (Arborio rice)

     1 tbsp olive oil

     1 tbsp butter

     1/2 of one large onion, chopped small

     3 cloves garlic, minced

     7-8 cups warm broth

     1 cup heavy cream

     pepper

     chopped chives

     1-2 tbsp butter

     2 cup of parmesan, romano or asiago cheese (or a combination of the 3)

 

Directions:

     In a large skillet, grill onions and garlic in butter and olive oil,

just till translucent. Slowly stir in rice along with 1 cup broth,

continue to stir. I usually have my stove set at the low end of

medium, not to hot and at this point don't leave the stove, just continue to

stir, I know there's other things to do but it's going to be soo good.

As the liquid goes away, add more broth a cup at a time and continue

to stir,  allow the risotto to absorb all the liquid as you would with

regular rice. When it is done it is more like a porridge or a thick mix.

If it's not aldenta or not moist enough just add more broth a small 

amount at a time. When tasted the rice should be firm and not hard

or tough. Add 1-2 tablespoon of butter and stir just to smooth. Now

slowly stir in1 cup of heavy cream and 1 cup of cheese till creamy.

One thing with Risotto when it is done, it is ready to eat.

Risotto waits on no one. I hope you enjoy and I can't wait to visit

little resources.

A Quick and Easy Dinner

It's a busy day, It's Hump Day, and you are thinking "what can I possibly make for dinner tonight.

What's good, healthy and something my kids and family would like. I don't want to stand 

over a stove, I don't want to spend hours preparing and cooking a meal". Well here's a delicious

idea. Get your Denicola's Pastalaya, look in your refrigerator and see what's left over, any meat

from previous meals, any sausage or seafood? If you don't see anything, it is as simple as thawing

out some sausage or any other meat and cut it up. Put water as directed on the package in a pot,

drop the package mix in the water and stir. Now put in the meat you choose and cook on high 

until it comes to a boil. Once it starts to boil drop the heat down to medium and cook on medium

until it is the consistency you like. Check every once in a while to make sure it's not sticking. You

have a delicious meal in 20 minutes, without all the stress and time. Now let's eat. 

 


A New Way of Life

Well it is summer time, the kids are out of school and everyone are looking for reasons to have fun, be outside and travel. We are starting a new program to give you easier and healthier ways to enjoy your favorite restaurant meals at home. Our first recipe is going to be Baked Potatoes with Crawfish Etouffee. Bake your potatoes as you would normally, while they are baking you can prepare your Etouffee and have it ready. When your potatoes are done, place each on a plate and slice in half long ways. Now spoon the Etouffee over your potatoes. Always remember, all your seasonings are in the package. There is no need for extra salt, pepper or other seasonings. You can change your seafood to your own preference or use none at all. Enjoy this delicious meal and let us know how it was.

Kim's "Dirty" Enchiladas

Hello Everyone!

 

Owner Kim Denicola sent the Denicola's Marketing team one of her family's favorite ways to use Denicola's Dirty Rice!  She put a Mexican spin on a traditional Cajun dish!

 

Ingredients:

·      1 package of Denicola’s Dirty Rice Gourmet Mix

·      ½ pound ground beef

·      ½ pound ground pork

·      2 cups of water

·      3 cups of grated Cheddar Cheese

·      1 package of Tortillas

·      Sour Cream, Salsa and Quacamole

 

 

Directions:

 

Brown meats in a stovetop pot, add two cups of water & Denicola’s Dirty Rice mix.  Cook on medium for 20 minutes stirring often.  Set aside.

Preheat oven to 350 degrees

Grease your casserole dish with a non-stick spray or a thin layer of butter.

Layer each Tortilla with Dirty Rice, Cheese and 2 tsp of Salsa, roll and place

in a casserole dish fold down.

After the dish is full, top with remaining cheese (at least 1 cup).

Bake 20 - 30 minutes at 350, until baked through.

When placing on a plate, top with a spoon of sour cream and give the option of

adding Salsa and Quacamole.

Hello Everyone!

 

We had a great time sampling at various Rouses Markets locations this past Saturday.  Chef Allison, the resident cook extraordinaire of Rouses on Baronne Street in New Orleans, created some fantastic combinations of Denicola's gourmet mixes.  Try this one out on your family!

 

Chef Allison's Baked Stuffed Catfish topped with Bisque

 

Ingredients  & Directions for Dirty Rice:

·      1 package of Denicola’s Dirty Rice

·      2 cups of water or chicken stock

·      ½ pound of ground pork

·      ½ pound of ground beef

 

Brown meat then add 2 cups of water & the Dirty Rice Mix.  Cook for 20 minutes stirring occasionally.

 

Baked Catfish Ingredients and Directions:

·      Catfish filets (look for thick ones)

·      Seafood seasoning, salt & pepper

 

Slice a “pouch” in each filet.  Stuff filets with Denicola’s Dirty Rice.  Season and place in a heated 350 oven for 8-10 minutes or until catfish is thoroughly cooked.

 

Bisque Ingredients & Directions:

 

·      1 package of Denicola’s Bisque

·      2 cups of water

·      1 cup of heavy whipping cream

·      Seafood of choice (optional)

 

Over a low heat on the stovetop, combine 2 cups of water & 1 package of Denicola’s Bisque Mix.  Simmer, stirring often for 10 minutes.  You may add seafood or vegetables at this time and continue to cook over low heat for about 10 minutes or until ready.  Pour heavy cream into the pot and mix.  Let this heat up, not boil, for 2 minutes.

 

Drizzle the Bisque over the Baked, Stuffed Catfish & serve!

Spinach & Oyster Bisque!

Hello Everyone!

 

Many consumers ask us for different ways to use our #1 Gourmet Dry Mix: Bisque!  Here is a new variation to this crowd favorite!

 

Ingredients:

  • 1 package Denicola's Bisque Mix
  • 2 cups of Water
  • 1 package of frozen spinach
  • 1 small container of oysters, drained
  • 1 cup heavy whipping cream

Directions:

Let spinach thaw and then drain to remove excess water.

Heat up 2 cups of water in a stovetop pot and add the Bisque Mix.  Keep the temp low to medium, whisking often.  (If the sauce gets too thick, add more water.)

Let the mix simmer for 10 minutes.

Add the spinach to the Bisque mixture, and heat this up for about 2 minutes, stirring often.

Add the drained oysters to the soup and let this cook for 6-8 minutes on medium low, continuing to stir frequently.

Finish off with 1 cup of heavy whipping cream and heat (do not boil) for 2 minutes!

Serve hot!

This soup would go perfectly with a side salad & crusty french bread!

Denicola's Catfish Acadian

Hello Everyone!

 

Today we are sharing a Louisiana favorite made "Denicola" style!  Catfish Acadian can be found on the menus of many restaurants in our area!  Now you can recreate this delicacy in your own kitchen!

 

Ingredients

·      2lbs. catfish fillets

·      Canola Oil for frying

·      2 cups cornmeal

·      2 Tablespoons Chef Prudhomme’s Seafood Magic or your favorite seasoning

·      Salt & Pepper

·      1lb. crawfish tails (crab or shrimp could be used)

·      1 package Denicola’s Etouffee Mix

·      2 cups water

 

Directions

 

Fried Catfish Directions:

Fill fry pot or deep fryer half full with Canola Oil.  Heat to 350 F.

Pat catfish dry.

Mix 2 cups of cornmeal with 2 TBS Seafood Magic, Salt & Pepper to taste.

Dredge Catfish fillets in cornmeal and fry until golden brown, drain on paper towel covered plate.

 

Crawfish Etouffee Directions:

Mix Denicola’s Etouffee mix with 2 cups of water on medium to low heat.  Let this cook for 10 minutes, stirring often.  Add cleaned crawfish tails to mixture and let this heat up for 8-10 minutes.

 

Plate up Fried Catfish Fillets and top with Crawfish Etouffee.  (This could be served over rice, orzo or cooked spinach).

Seafood Gumbo with Shrimp, Crab & Oysters

Hello Everyone!

 

Here is our weekly seafood recipe!  This week we are showing you just how easy it is to make a traditional Louisiana Seafood Gumbo using Denicola's Gumbo Mix!

 

Ingredients:

·      1 package of Denicola’s Gumbo Mix

·      2 ½ quarts of water or chicken stock

·      Seafood of choice – we use 1 pound of shrimp, raw & peeled, 1 pack of Gumbo crabs (4-5) or 1 pound of lump crabmeat and one pint of oysters.

·      1 stick of butter (optional)

·      Steamed white rice

 

Directions:

 

Combine Denicola’s Gumbo mix with water or stock in a large pot, stir and bring to a boil.  Cover pot and lower heat to medium low and cook for 30 minutes.

 

Raise heat and bring to a boil, then add shrimp, crab & oysters.  Reduce temp to simmer, cover and let gumbo cook on low for 45 minutes, stirring occasionally.

 

For additional richness add a stick of real butter to the pot after it has been simmering for 15 - 20 minutes.

 

Serve over white rice!

 

Additional sides:  Potato salad, French bread, white wine, File’ powder (check out this blog on how to make your own File')!

Grilled Black Drum topped with Spinach Bisque

Hello Everyone!

Black Drum is a salt water fish that is a distant cousin to the popular Red Drum used for "Blackened Redfish".  It is a great choice for grilling indoors or out!  Here is our recipe!

 

Ingredients:

·      Black Drum Filets

·      2 TBS Extra Virgin Olive Oil

·      2 TBS Butter

·      1 lemon

·      Seafood Seasoning

·      Salt & Pepper to taste

 

Cooking directions for Drum:

 

·      Cover the bottom of a black iron skillet with EVOO.

·      Pat the filets dry with a paper towel.

·      Lightly coat filets with EVOO and sprinkle both sides with Seafood Seasoning, salt & pepper

·      Heat skillet on medium temp, add butter to skillet

·      Grill drum filets for approximately 5 minutes per side, squeezing fresh lemon juice over fish prior to flipping.

·      Place skillet in a warm oven (225 F) if Bisque is still cooking.

 

Spinach Bisque Topping:

 

Ingredients:

·      1 package Denicola’s Bisque

·      2 cups water

·      1 package of thawed frozen spinach or bag of fresh spinach, cleaned

·      1 cup heavy whipping cream

 

Directions:

·      Heat up 2 cups water and 1 package of Bisque over a low fire for 10 minutes, whisking often

·      Add spinach to mixture and continue to cook for another 5-8 minutes until warmed, stirring often.

·      Add one cup of heavy whipping cream and heat up for several minutes.

·      Plate Drum Filets and top with thickened Spinach Bisque.

 

* Can be served over a bed of orzo

Crawfish Étouffée & Cornbread

Hello Everyone!

 

Many of our local restaurants offer a creative pairing of Cornbread & Crawfish Etouffee!  We wanted to show you how to recreate this gourmet meal in less than 45 minutes!  Let's get started.

 

Ingredients:

  • 2 packages (8.5 oz) of corn muffin mix (We use Jiffy)
  • 2 eggs
  • 2/3 cup milk
  • 2TBS sugar
  • 1 package Denicola Etouffee Mix
  • 1 pound Crawfish, boiled & peeled
  • 2 cups of water

Directions:

  • Preheat oven to 400 F
  • Blend cornmeal mix, eggs, milk and sugar in a bowl.  Batter will be slightly lumpy.
  • Let batter rest for 4 minutes
  • Fill muffin cups 2/3 full or pour entire batter into a cast iron skillet
  • Bake for 15-20 minutes or until golden brown

Crawfish Etouffee

  • Pour Denicola's Etouffee mix into a stovetop pot filled with 2 cups of water.
  • Whisk thoroughly, cooking on a low to medium heat (do not boil).
  • After 10 minutes add a pound of Crawfish
  • Cook for 8-10 minutes on low until crawfish is hot

 

Place a cornbread muffin or square of cornbread in the center of a shallow bowl.  Spoon a generous serving of Crawfish Etouffee over the hot cornbread!  Enjoy!

 

Spinach, Kale, or Collard Greens would be a perfect side dish for this Southern meal!

Chicken & Sausage Jambalaya

Hello Everyone!

 

In Louisiana, rice is a stable in the kitchen!  Denicola's Jambalya is a filling entree that can be prepared in less than 30 minutes from start to finish!

 

Ingredients:

  • One package of Denicola's Jambalaya Mix
  • 2 cups of water or broth
  • Chicken, raw or cooked, cut into bite size cubes
  • 1 package of Sausage, sliced into bite size portions

 

Directions

  • Combine dry mix with water in a stovetop pot and bring to a boil, reduce heat to medium.
  • Add chicken & sausage, stir
  • Cover and let look for 20 minutes, stirring
  • Remove from heat and let stand until desired consistency is reached.

*This mix is also great with shrimp!

 

This entree can be paired with your favorite vegetable for a hearty meal!  It is great with green beans, corn on the cob or roasted carrots!

Crawfish Bisque

Hello Everyone!

 

As promised, here is a seafood recipe!

 

Ingredients

  • 1 package of Denicola's Bisque Dry Mix
  • 1 pound of peeled crawfish tails (already cooked)
  • Vegetable of choice - canned (drained), frozen or fresh
  • 2-3 cups of water or broth
  • 1 cup of heavy whipping cream

 

Directions

  • Mix the Bisque mix with 2 - 3 cups of water in a stovetop pot on a low to medium heat.
  • Whisk often and lower heat, if mix begins to boil!
  • Cook for 10 minutes 
  • Add your vegetable of choice and warm up for a minute or two (corn, spinach, kale, or potatoes work well)
  • Stir in the boiled crawfish tails and heat up for about 8 minutes!
  • Finish off with a cup of heavy cream, heating for about 2 minutes

 

Serve in 1 cup (8oz) as your starter soup - The mix will yield 6 servings!

          or

Serve in 12 oz serving as your entree! The mix yields 4 servings of this size.

 

Pair with crusty french bread warmed in the oven and a fresh garden salad for a filling dining experience.

 

Wine suggestions include :  Chardonnay or Sauvignon Blanc

Hello Everyone!

 

Denicola's Demo team wanted to take a moment to thank all of you for joining us in New Orleans at several locations!  You sampled and purchased our gourmet mixes in record numbers and we appreciate that!

On Saturday we added two new store locations to our growing list!  We are now on Aisle 5 of Rouses Market on Airline Highway in Metairie and in the "famous" meat department of the Lake View Rouses Market on Franklin Avenue.  We will be sampling in all of our new locations over the next couple of weeks!

Four Seasons in One Week!

Hello Everyone!

There is a joke that in South Louisiana we can experience all 4 seasons in one week!  Today the highs are in the 70's and tomorrow, we have a predicted low of 28!  Yikes!  Fortunately, at Denicola's we have a gourmet dry mix perfect for every season!

                   Pastalaya - The Perfect Spring Dish!  Just add chicken & your favorite sausage!

                   Gumbo - Winter Warm Up! Add some seafood and you've got a Cajun soup to heat you up!

                   Dirty Rice - Fall Filler Up!  Stuff some bellpeppers with our Dirty Rice!  Yum!

                   Etouffee- Summer Seafood!  Add some shrimp and serve over rice!

Crab & Spinach Bisque

Good Morning!

Its a sunny, crisp day in South Louisiana!  Perfect for our gourmet Bisque!  Let's make a new version today!

Ingredients you will need:

  • 1 package of Denicola's Bisque Mix
  • 2 cups of water
  • 1 package of frozen spinach cooked and drained (8oz)
  • 1 pound of lump crab meat
  • 1 cup (8oz) of heavy whipping cream

Add the Bisque mix to two cups of water in a pot on your stovetop.  Temp show be low to medium.  Cook this mixture, whisking often, for 10 minutes.  Add the spinach and cook for two more minutes, then add the crab meat.  Cook for 3-5 minutes until thoroughly warmed and polish off with the heavy cream.  Warm this for another two minutes, then serve with crusty bread!

HINT:  Do not let the mixture come to a boil, it will get thick.  If this happens, just add more water.

Hello Everyone!

 

Recently we were sampling several of our gourmet mixes at the grand opening of the new Rouses Market in Denham Springs, LA.  Our packages of Dirty Rice were flying off the sample cart!  Let me share a "dirty" little secret.  We use a combo of ground beef and ground pork as the meat base for this dish!  The pork adds a flavor dimension that is wonderful!

 

Dirty Rice is a rice based side dish flavored with a wonderful seasoning profile.  It is also known as Rice Dressing and is a favorite on Louisiana dinner tables!

Hello Everyone!

 

The weather is begging us to pull out our gumbo pot and stir up one of Louisiana's most beloved concoctions!  With Denicola's Gumbo Gourmet Mix, we take the "work" out of this dish.  Normally you would need to start with a Roux, add the trinity (bell peppers, onion & celery), season and then add your liquids and seafood or meats.  With our Gumbo mix, all you do is add water, simmer for 30 minutes, then add your meats or seafood and cook another 45 minutes and serve over rice!  It can't get much easier than that!

 

Serve with a side of potato salad!

Hello Everyone!

 

Fall has arrived in South Louisiana!  Our weekends are filled with the 3 F's - Family, Food & Football!  Recently we were sampling at one of our local grocery stores and we were delighted to spot a Young Shopper with exceptional taste!  

 

She was obviously preparing for some family tailgating with her Denicola's Pastalaya!

 

Our Pastalaya is a family favorite and our #1 choice for children.  It has some flavor, so if you need to tone it down, we've got a simple trick.  Add a tab of butter to each serving!  This will balance the spicy taste! Generally we use chicken & sausage as the proteins for this dish, but just about any option will work. It is great with pork and seafood as well!

Hello Everyone!

 

Several years ago, our owner, Kim Harris Denicola, set out to make life easier in the kitchen for working families.  She realized that no one had time to "slave over" a stovetop all day as her grandmothers once did.  Pulling from  traditional Louisiana fare, she created dry gourmet mixes loaded with flavor, yet simple to make.

 

The thought was to manufacture products that could be prepared with a few key ingredients in a small amount of time.  Kim's Bisque, Pastalaya, Jambalaya, Dirty Rice and Etouffee are all ready to serve within 30 minutes!  Her gumbo mix is ready in less than 2 hours, shaving off hours of cook time for the traditional Louisiana soup!

 

Kim is the daughter of two very entrepreneural parents and was raised in a "work for yourself" atmosphere.  Taking knowledge garnered from her parents, she set out on the path to take her food company national.  She has surrounded herself with a top-knotch team to manage the details, all under her supervision and leadership!  With the solid support of her husband, David, Kim and her team are launching her food company nationally this year!

Seafood Gumbo

Hello Everyone!

 

In anticipation of the cool front headed our way, we've stocked up on some seafood for a big pot of gumbo we plan to make this weekend!  Our Denicola's Gumbo Mix is a great starter when you don't have time to babysit a roux!  Just simmer the mixture for 30 minutes or so, then add in some seafood.  We love to add gumbo crabs, shrimp and sometimes oysters!  We serve this over steamed rice with a side of warm potato salad.

 

Here's one of our favorite potato salad recipes courtesty of Ree Drummond from Food Network!

 

Ingredients:

5 pounds russet potatoes (about 8 medium russets)

1 1/2 cups real mayonnaise, plus more if needed

4 tablespoons yellow mustard, plus more if needed

5 whole green onions, sliced up to the darkest green part

2 tablespoons fresh dill, chopped

1 teaspoon kosher salt, plus more if needed

1/2 teaspoon fresh ground black pepper

1/2 teaspoon paprika

10 whole small sweet pickles, sliced (optional)

2 tablespoons pickle juice (optional)

6 whole hard boiled eggs, peeled and sliced


Directions

Cut the potatoes in halves or thirds, then boil until fork tender. Drain. Mash the potatoes or run them through a ricer or food mill to make them extra fluffy.

Fold the potatoes together with the mayonnaise, mustard, green onions, dill, salt, pepper, paprika and other seasonings you like. Fold in the pickles, pickle juice and eggs, and taste for seasoning. Add more salt, mustard or mayo as needed.

Hello Everyone!

 

A slight chill has hit South Louisiana and that means one thing:  Gumbo!  Just about everyone around here has their own favorite pot to make Gumbo in.  Some swear by cast iron as the magic of their concoction.  Others have the heavy Magnalite 14 quart pot that keeps everything nice and hot!  Regardless of what you use we have developed a way to cut down on your cooking time!

 

Use Denicola's Gourmet Gumbo Mix as your base!  Gone are the days of standing over a Roux hoping it doesn't burn, yet trying to get that rich, dark favorful color!  Simply add our mix to water and let it cook for awhile, then add your seafood!

 

It doesn't get much easier than that...hmmm I think we'll put on a pot this afternoon in the test kitchen!

 

Steam up some rice, add a side of potato salad and you are ready to eat!

Hello Everyone,

Tomorrow is the first day of October and we are beginning to feel a slight drop in temps in South Louisiana!   Our team enjoys a variety of soups and sandwiches during the cooler weather!  We suggest you give our Bisque a try.  The directions on the package are simple to follow and will deliver a wonderful, bowl licking, Shrimp & Corn Bisque!  

 

Don't stop there, get creative with this incredible foundation sauce.

 

What about using crab meat and spinach instead?  The combination of sweet crab and savory spinach is sure to please everyone at the dinner table!

 

Are you celebrating "Meatless Mondays"?  Try this for a quick soup!  Mix up the Bisque per the package instructions but instead of corn add brocolli, cook until tender and then finish off with a little heavy whipping cream!  Yum!

 

Our Bisque Gourmet Mix is meant to be versatile!  It is great with any seafood, served over pasta or rice!

Hello Everyone!

 

Its the first day of fall 2014 and in South Louisiana that means getting our gumbo pot out!  Are you afraid to "burn" the roux?  Well, we've got the answer for you!  Our gourmet gumbo mix is the perfect starter for your next seafood gumbo.

 

Here's how simple it is:

  • Add one pack of Denicola's Gumbo Mix to 2 1/2 quarts of water or chicken stock
  • Mix this up, bring to a boil then lower heat and let simmer for 30 minutes stirring occasionally
  • Add 3 pounds of your favorite seafood - we suggest peeled shrimp and gumbo crabs!
  • Bring to a boil, lower hear and let simmer for 45 minutes
  • Serve with Rice

 

 Its as easy as that!

Balsamic Glazed Pork Chops & Dirty Rice

Hello Everyone!

 

Last night we paired our Denicola's Dirty Rice with Balsamic Glazed Pork Chops! We wanted to share this 5 star (according to our family) recipe for pork with you!

 

Here is what you'll need:

  • 4 boneless pork chops
  • Olive Oil
  • Salt & Pepper
  • Small onion chopped
  • Fresh rosemary chopped-1/4 teaspoon
  • Fresh thyme chopped 1/8 teaspoon
  • Minced Garlic 1 tablespoon
  • Balsamic Vinegar  1/4 cup
  • Honey 1 tablespoon
  • Chicken broth 1 cup

Cook the pork chops in a heavy skillet (we use cast iron) in a couple of tablespoons of olive oil.  Season both sides of chops with salt & pepper and cook for 5 minutes on each side.  Remove to platter and cover to keep warm.

 

In the skillet add more olive oil, onions, garlic, and herbs.  Cook for a couple of minutes until onions become clear and tender.  Stir in broth, balsamic vinegar & honey.  Now the reduction begins!  Raise the heat and stir often until liquid reduces in half.  

 

Add the chops back into the sauce for a minute or so to warm them!  

 

Serve with our dirty rice for a delicious meal!

Hello Everyone!

 

Are you ready for some football?  How about tailgating?  In South Louisiana Football, Family, Friends & Food go together!  One of our favorite tailgating foods on campus is Pastalaya.  You can get your own "tailgating" experience with our Pastalaya Mix!  Preparing it is a breeze!

 

Ingredients:

  • One bag of Pastalaya Mix - feeds 4-6
  • One pound of chicken cut up into bite sizes - can be raw or cooked
  • One pound of your favorite sausage, diced.
  • 3 cups of water

 

Directions:

Put water to boil in a nice size pot with a lid.  Once the water begins to boil, stir in Denicola's Pastalaya Mix, chicken & sausage.   Reduce heat to medium, stirring often and put on lid.  Check pastalaya often to prevent sticking or burning, you may need to reduce the heat if its cooking too fast.  Cook for 20 minutes!

Serve with some garlic bread and a cold one!

It Begins Again

Hello everyone, well today is the first day of school. Wow another year has gone by. This weekend was a super busy but exciting time. It took a lot to get 3 kids ready for today. As I stood back and looked at all the bags piled on my counter full of pens, pencils, paper, and the really important stuff socks, belts, etc. I realized, I had to get all this separated and organized but I also had to get dinner ready for a hungry bunch of shoppers. Well that's why I started Denicola's Foods, for just such moments. A pot of water, a bag of Pastalaya, some chicken cut up. This time, I added cut up pieces of pork chops from the night before. Stir it all together, put a lid on and your done. (I lifted the lid once or twice when I walked by just to make sure it wasn't sticking AND to fill the houe with the smell). With a little help from the only other girl in the house Megan, we got it all separated and distributed to everyone's room just in time for dinner to be served. As I sat around our dinner table and listened to the laughter about past years and the nervousness in their voices about their upcoming year. I realized that the time spent at that table, rather than in front of a stove, is a gift that keeps on giving. Enjoy your family tonight. 

I'll let you know how the first day went.

Cream Cheese Stuffed Strawberries!

Hello Everyone!

The Marketing Team is getting ready for the 4th and we were discussing what we wanted to eat!  Of course we were...we are in the Food Business!!!  This little simple recipe is at the top of our list.  Find it and other ideas for the holiday on our Pinterest board called What's for Dinner & Dessert.

 

Cream Cheese Stuffed Strawberries

Time: 20 minutes

Yield: About 30 strawberries

Recipe adapted from The Sisters Cafe

 

2 (1 pound) containers strawberries

2 (8 ounce) packages cream cheese, softened

6 T powdered sugar

2 T orange juice (fresh, or from a bottle)

1 C cool whip

1 t vanilla

dash salt

 

1. Wash your beautiful berries and pat them dry. 

2. In your stand mixer, or large mixing bowl, beat 2 packages of softened cream cheese until smooth.

Add 6 tablespoons of powdered sugar, 2 tablespoons orange juice, 1 cup cool whip, 1 teaspoon vanilla and

a dash of salt. Beat until well combined and smooth. 

3. Set the strawberries up on their green stems. With a sharp knife cut a slit through the top of each

strawberry, making sure you don't cut all the way through to the stem. 

4. Cut another slit along the top, forming an x pattern. 

5. Place a large open star tip in a pastry bag and fill the bag with the cream cheese mixture.

If you don't have a large star tip, or a pastry bag, you could just use a large ziploc bag and cut a small hole

in the end. 

6. Pipe the cream cheese filling into the cut end of each strawberry. 

7. Place a blueberry on the top and set them on a pretty platter. Refrigerate until serving.

Hello Everyone!

Here is an easy treat sure to please everyone on the 4th of July!  It's watermelon stars!

You'll need:

  • Watermelon, sliced in 1 to 2 inch thick slices
  • A star shaped cookie cutter
  • Popsicle sticks

Cut the watermelon with the cookie cutter, insert the sticks and display by sticking "in" a sturdy slice of watermelon!  You could also float the stars in lemonaide or use as a garnishment to a summertime drink!

Kim's Cheesy Chicken Pastalaya Casserole

Hello Everyone!

 

Our Gourmet dry mixes should be looked at as a base for lots of different recipes.  Last night I got "creative" with our pastalaya mix and the results were great!  I knew I had to share this casserole with you, when the men in my life went back in the kitchen for second helpings!  In fact, my husband packed himself a take along for lunch today!

 

So let's get started!

 

Ingredients:

  • 2 packages of Denicola's Pastalaya Gourmet Mix
  • 4 cups of water
  • 2 cups of chicken broth
  • 2 pounds of chicken, raw or cooked, chopped into bite size pieces
  • 2 cans of cream of chicken soup
  • 1 cup of mozzarella, split into 1/2 cup portions
  • 1 cup of parmesan cheese, split into 1/2 cup portions

 

Prepare the Pastalaya per package instructions, adding the 2 bags of mix to 4 cups of water, plus two cups of broth in a pot on your stovetop.  (Use a 4 -5 quart pot because the pasta will expland!)  Bring this to a boil and add chicken. Lower heat to low medium, stirring often.   Cook for 15 minutes, until pasta is "al dente".  It should be slightly undercooked.

 

Preheat oven to 350 F

 

Next, in a large bowl combine cooked Pastalaya, 2 cans of cream of chicken soup, and 1/2 cup of mozzarella cheese and 1/2 cup of Parmesan.  Mix thoroughly and pour into a greased casserole dish.

 

Top pasta with remaining cheese and place in oven until bubbling and lightly browned.  This should take about 30 minutes.

 

Serve warm!

 

Enjoy this comfort food guaranteed to fill up your family and put smiles on their faces!

Hello Everyone!

 

We hope you had a great weekend!  Ours started on Thursday night when our team met at Perkins Rowe in Baton Rouge!  We enjoyed the live music and a casual dinner at California Pizza Kitchen.  We have to brag about dessert - Warm Butter Cake topped with Vanilla Ice Cream!  It melted just like butter in our mouth.  Wow, we will be in the kitchen this week trying to recreate this one!

Zabaglione from Scratch

Hello Everyone!

 

We were in the kitchen yesterday working on a traditional Italian dessert called Zabaglione (Sabayon or Zabaione).  It is made with some basic ingredients and we are going to show you how to do it from scratch!

 

You'll need:

  • 2 Egg Yolks
  • 2 Tablespoons of Sugar
  • 3 Tablespoons of Marsala or Moscato Wine
  • 1/3 Cup of Heavy Cream
  • Fresh strawberries and blueberries
  • Patience 

 

Grab your double boiler and place on stovetop with a couple of cups of water in the bottom.  Bring to a low boil.  In the top bowl, place your egg yolks & sugar.  

 

Now the fun begins, put the egg/sugar mixture on the double boiler base that has water at a low boil, and start mixing with your hand mixer.  Whisk the mix until it becomes thick like pudding - this could take 15 minutes.  Hint:  Keep the boil low or you will end up with scrambled eggs-oops!!!

 

Once you reach the desired thickness, whisk in your 3 Tablespoons of wine.  Remove from heat and place bowl on ice (we use a larger stainless steel bowl).  Next, stir in the heavy cream to the mixture!

 

Pour this custard over fresh strawberries or blueberries and refrigerate!

 

Serve once chilled!  Makes 4 custard size servings!

 

Hint:  Make a double boiler with a regular pot and a stainless steel bowl that fits on top!

 

Taking it over the top:  Serve in Champagne Flutes for special occassions!

Chicken Linguine

Hello Everyone!

 

We are back in the kitchen using our Bisque Gourmet Mix as a foundation for another great meal!  Let's get started!

 

Ingredients:

·       1 bag Denicolas Bisque mix (contains all the spices you need)

·       2 -3 cups of water or chicken broth

·       2 boneless/ skinless Chicken breasts (cut into bite size pieces)

·       ½ cup heavy cream or whipping cream

·      8 ounces linguine

·       ¼ cup grated Parmesan cheese for topping

·       1 tablespoon fresh or dried parsley

 

Directions:

  • Cook Linguine per package instructions, drain & set aside
  • On top of stove, in a 3 quart pot, combine Bisque Mix with 2-3 cups of water, heat to barely a boil, stirring often with a whisk.  (If sauce becomes too thick, add more water, 1/2 cup at a time) Lower to simmer for 8-10 minutes until vegetables are hydrated.
  • Stir in chopped chicken breasts let cook for 10 -12 minutes until tender.
  • Stir in 1/2 cup of heavy whipping cream and allow to heat up for about 2 minutes, do not bring to boil.
  • Combine sauce with linguine in a large bowl, toss to cover pasta completely
  • Serve, topped with grated parmesan cheese and a sprinkle of parsley for garnish

Hint:  Boiled crawfish leftovers, raw shrimp, or crab can be substituted for the chicken.  Adding in sun-dried tomatoes or black olives will give the dish an Italian flavor!

Perfect Pasta Salad!

Hello Everyone!

This weekend our team got together to sample some steak rubs and try out a pasta salad that I came up with!  WOW!!!  It got 5 Stars from everyone, and like many of my recipes, it was simple to put together!

 

Here is what you will need:

 

1 package of  (12 oz) tricolor spiral pasta

 

1 package of (10 oz) refrigerated tricolor tortellini

 

12 ounces of provolone cheese, cubed

 

12 ounces hard salami, cubed

 

2 cans (2 1/4 oz each)  sliced olives, drained

 

1 medium onion, chopped
 
4 garlic cloves minced
 
2 envelopes Italian salad dressing mix (requires oil, vinegar & water)
 
 
On your stovetop, in separate pots, cook the Spiral Pasta and the Tortellini per package directions.  Once cooked, drain separately and rinse with cold water.
 
In a large bowl, combine cooked pastas, cubed provolone cheese, chopped salami, sliced olives, diced onions and minced garlic.  Toss ingredients.
 
Mix up salad dressing per instructions (I used a well know mix and added vinegar, oil & water) add to pasta mixture.  Toss to thoroughly coat the pasta with the dressing.
 
Serve immediately or refrigerate!
 
Hint:  This salad would be great with sliced Artichokes, Sun-dried Tomatoes, diced Chicken, or broccolli!  Get creative with this one!

Making Jambalaya!

Jambalaya finds it's roots in the Cajun, Creole and Spanish cultures of our state!  It is a weekly favorite with most Louisiana families.  We created a few short cuts along the way to make it easy for you!

 

What you'll need, ingredients:

  • One 8 ounce package of Denicola's Jambalaya Gourmet Mix
  • Three cups of water
  • One pound of raw or cooked chicken, cut into bite size pieces (you can substitute pork, turkey or seafood)
  • One pound of sausage cut into bite size pieces

 

Bring three cups of water to a boil in a pot on the stovetop. Next, stir in the gourmet mix.  Lower heat and add your chicken and sausage. We like to prep our meats into bite size pieces.  Bring to a low boil, then, cover and let simmer (lower heat) for about 20 minutes, stirring occasionally.  Uncover, fluff rice and check to make sure it is done.  Serve warm!

 

Here's a few helpful hints from our kitchen:

  • Running late, grab a rotisserie chicken from the market or a can of chicken - both work fine!
  • It's ok to add water if your rice is not fully cooked - it's the steam that finishes the process!  Start with one half cup.

Sampling on Saturday!

Saturday was the perfect day to sample our Shrimp & Corn Bisque and Chicken & Sausage Pastalaya to the crowds at Breaux Mart on Magazine Street in New Orleans!  For those of you that have never visited "Nawlins" before, Magazine is a wonderful place to spend the day!  The six mile long stretch is a great mixture of shops, restaurants and residential homes (most of which are worthy of photographing)!  

After we fed hundreds of fans at the market, we took some time and enjoyed the sites of this beautiful place.  We witnessed a Jazz Funeral for a local "Celebrity Dog", Dag at BellaDonna Spa! This memorial turned into a fund raiser for a local animal group!  Only in New Orleans!

We saw double deckered site seeing buses loaded with tourists!  These brightly colored red vehicles are relatively new to the city, but offer a great way to see the streets! 

The atmosphere and energy of our great state is what we try to package in every bag of our product!  Our food is meant to be enjoyed with family and friends!  So the next time you sit down to a bowl of one of our gourmet mixes, imagine the sounds of jazz in the background and happy people going about their day!

What a great weekend we had!  I love when I get out and meet people in the cities we visit.  It was a beautiful day, the sun was shining, and there was something going on everywhere we looked!  People were out enjoying the day. My team and I were in New Orleans at Breaux Mart's Store on Magazine St.  It's a wonderful place to see and enjoy with a wide variety of sights, sounds and smells. You can feel the energy everywhere, which is a lot like cooking!  There is an energy that goes into cooking that shows itself in smiles, laughter,conversation and sheer happiness. This is what I try to accomplish in every product I make. You can make our products, like Pastalaya, on a summer evening in just 20 minutes. Just add water, meat (whether it's fresh or left over), let it cook to the moisture level you prefer and it's ready to go. Grab a glass of sweet tea and you're done. Now you have time to relax and enjoy the smiles, the laughter, the conversation and the sheer happiness of family and friends. What a great way to spend an evening! ~Kim

Prepare Denicola’s Dirty Rice per package instructions.  Amy used Pork & Ground Beef to really add some flavor to the mix!  She stuffed fresh green bell peppers from her garden and topped this with Panko bread crumbs.  She put these in the oven until the bell peppers were tender!

Hello everyone,

Hmmm, one of my all time favorite meals growing up in South Louisiana was Jambalaya!  Did you know that you can add seafood to the Denicola Jambalaya mix to make it “lent” friendly!  Let’s get cooking…
 
You’ll need:
 
  • 1 package of Denicola’s Mix
  • 2 cups of water
  • 1 lb of seafood – shrimp, crab, oysters and crawfish work well
On a stovetop, bring 2 cups of water to boil and stir in the Jambalaya mix.  Reduce heat to medium and cook for 10 minutes.
 
Add seafood and cook for another 10 minutes or until the seafood is cooked. (Shrimp will be pink)
 
Let Jambalaya sit until the desired consistency is reached.

Hello Everyone,
I have written about our Shrimp & Corn Bisque before and it is definitely a crowd favorite.  Today’s Baton Rouge Advocate features a great article written by Helana Brigman about her own experience with the Bisque!
 
Putting together a delicious Shrimp & Corn Bisque is simple!  Here’s what you will need:
  • 1 package of Bisque Mix
  • 1 can of whole corn, drained
  • 1 cup of heavy cream
  • 1 pound of small shrimp
  • 2-3 cups of water
Put 2 cups of water on the stovetop and bring to boil, add Bisque Mix, whisking and lower heat.  Allow this mixture to cook for about 10 minutes, adding water if it gets too thick.  Next, stir in the corn and then add the shrimp.  Let cook until the shrimp turn pink, usually about 5 minutes.  Finally, add the heavy cream to the soup, letting this heat up but not boil!
 
Grab some crusty bread and enjoy!

Tilapia with a Twist!

Hello Everyone!
Today, I am going to show you how to pair an extremely popular fish, Tilapia with one of our Denicola staples, Étouffée!
 
Here is what you’ll need:
 
  • 1 medium Tilapia filet per person – this fish is readily available in your local seafood department, fresh or frozen!
  • 1 package of Denicola’s Étouffée Mix
  • 1/2 cup of heavy cream – optional
  • Your favorite herbs -parsley, chives, thyme and green onions would work well!
  • Olive Oil, Salt & Pepper
 
To prepare the tilapia – defrost if frozen-you can submerge the frozen packets in a bowl of room temperature water to defrost.  This only takes a few minutes!  Rub the filet with olive oil, salt & pepper and put in a heated pan on the stovetop.  Coating the pan with a non-stick spray or olive oil will prevent sticking!  Cook the filets for 5-7 minutes on each side!
 
Meanwhile – add the Étouffée mix to two cups of water in a pan on the stovetop on medium high!  Whisk this mixture until it begins to thicken, be sure to stay with it!  Lower the heat to simmer and add a little heavy cream, and your herbs.
 
Plate your filets and spoon the Etouffee mixture over the fish!  A side of pasta, rice or potatoes would complete this meal!
 
Best of all, this is ready in less than 20 minutes!

Seafood Specialties for Lent!

Over the next 40 days during Lent, we will be posting ways that Denicola Food products can be used with Seafood!  For Ash Wednesday, we suggest a South Louisiana favorite – Shrimp Étouffée served over steamed white rice!
 
 
Ok, let’s get started!
 
You’ll need:
 
  • 1 pack of Étouffée Mix
  • 3 cups of water
  • 1 pound of  fresh or frozen shrimp
  • 1 cup of uncooked white rice
 
First cook your rice in a rice cooker or on top of the stove-follow the directions on the package!
 
Next Combine the Étouffée mix with water in a stovetop pot and bring to a boil,  stirring often.  Reduce to simmer, stir in the shrimp and cook until they term pink.  We suggest you simmer the mixture for about 15 minutes.  Serve over steamed rice for a delicious lenten meal!

Many of you purchased Denicola’s Bisque to use over the holidays!  Follow these simple instructions for fail proof soup every time!
Serve with some hot french bread and your favorite beverage!
  • Mix (1) package of Bisque Mix with two cups of heated water and whisk to mix!  Reduce heat and let the vegetables hydrate for a few minutes!
  • Drain a can of Whole Kernel Corn and stir into the mix – let this heat up!
  • Add your frozen shrimp – stir in and cook until pink!
  • Finally, add 1/2 pint of heavy cream, non-fat half & half or milk to the mixture!
  • Let this heat up but not boil!

Happy Thanksgiving to everyone!  Today, I want to show you just how quick and easy it is to prepare Rice Dressing using Denicola’s Dirty Rice Mix.
  • Brown your meats – I tend to use a combination of ground meat and ground pork
  • Once brown, add water or chicken stock – see directions for exact amount
  • Let boil
  • Stir in Dirty Rice Mix and continue to cook
  • Stir often, lowering the heat to medium
  • Mixture is done when rice is tender & liquids have cooked out
To serve, you can put into a serving dish or stuff bell peppers!

Last weekend a customer stopped by our table at Caladros Supermarket to sample the Bisque & Pastalaya.
She said, “I cook everything from scratch, but your mixes are really, really great!  I’m going to buy some and see if I can fool my sister!”  This was a typical reaction from customers at our samplings.  They can’t believe how easy Denicolas Mixes are to prepare!  They taste like you have been slaving over the stovetop for hours!  Both the Bisque and Pastalaya take about 20 minutes to prepare!

Denicola's Crawfish Etouffee

Etouffee (pronounced e.tu.fe) was invented years ago in South Louisiana and has been a family favorite for as long as I can remember.  It means “to smother” and is rich in Cajun heritage and flavor!  Our Denicola’s Etouffee Mix is the base for a delicious main course served over white rice.
You will need the following:
  • Denicola’s Etouffee Mix
  • 3 cups of water
  • 1 pound of Shrimp or Crawfish  - make certain your seafood is not frozen! (Shrimp and/or crab can be used.)
  • White Rice
Combine the Denicola’s Etouffee Mix with water in a stovetop pot and bring to a low boil while stirring often!  This should not take very long.  Reduce your heat to a simmer and add your raw seafood to the mixture.  Let this simmer or “smother’ for about 15 minutes, stirring often.  Plate up rice and spoon a generous portion of the Etouffee on top.

Quick and Easy Chicken and Pasta Bisque
We all know that midweek can be quite hectic. When it comes to making a wholesome meal, sometimes time is just not on our side. I have come up with numerous recipes over the years that will not only be quick and easy, but also taste like it took hours to prepare! Below is one of my personal favorites. It is a perfect option for that leftover grilled chicken you don’t know what to do with, or swing by the grocery store on your way home and grab a rotisserie chicken and in less than 20 minutes, you can have dinner on the table!
 
 Ingredients:
  • Pre-cooked Chicken (I usually use leftover grilled chicken or a rotisserie and debone it)
  • 1 Box of Shell Pasta
  • 1 Package of Denicola’s Bisque Mix
  • 1 Cup Heavy whipping cream
  • 3 Cups of Water
  • 1 Can of Corn (drained)
Method:
Boil lightly-salted water and place pasta in the boiling water and cook to desired texture. While the pasta is cooking, combine Denicola’s Bisque with 3 cups of water and bring to a boil. Reduce and stir often to prevent sticking. Add 1 cup of heavy whipping cream and drained can of corn and simmer for 10 minutes. Continue to stir Bisque as it thickens. Prepare chicken by deboning and chopping into bite-size pieces.  Serve on a pasta bed, with chicken on top, and bisque poured over the top.
 
For a Restaurant Worthy Meal, top the dish with crabmeat for an extra oomph! Enjoy!
