Hello Everyone!
This weekend our team got together to sample some steak rubs and try out a pasta salad that I came up with! WOW!!! It got 5 Stars from everyone, and like many of my recipes, it was simple to put together!
Here is what you will need:
1 package of (12 oz) tricolor spiral pasta
1 package of (10 oz) refrigerated tricolor tortellini
12 ounces of provolone cheese, cubed
12 ounces hard salami, cubed
2 cans (2 1/4 oz each) sliced olives, drained
1 medium onion, chopped
4 garlic cloves minced
2 envelopes Italian salad dressing mix (requires oil, vinegar & water)
On your stovetop, in separate pots, cook the Spiral Pasta and the Tortellini per package directions. Once cooked, drain separately and rinse with cold water.
In a large bowl, combine cooked pastas, cubed provolone cheese, chopped salami, sliced olives, diced onions and minced garlic. Toss ingredients.
Mix up salad dressing per instructions (I used a well know mix and added vinegar, oil & water) add to pasta mixture. Toss to thoroughly coat the pasta with the dressing.
Serve immediately or refrigerate!
Hint: This salad would be great with sliced Artichokes, Sun-dried Tomatoes, diced Chicken, or broccolli! Get creative with this one!
